Un-BEET-able Chickpea Penne


Ingredients: (Serves 2-3 People)


2/3 Can of Sliced Beets

2/3 Can of Chick Peas

1 tsp. Oregano

1 tsp. Paprika

1 tsp. Cumin

1 tsp. Chilli flakes (if preferred)

2 tsp. Basil

2-3 servings of any pasta you prefer (I chose vegetable penne for this recipe!)


  1. In a medium pot, boil enough water for your desired amount of pasta. Boil your pasta accordingly.
  2. In a food processor, blend the 2/3 can of chick peas, and the 2/3 can of sliced beets. Your seasonings: 1 tsp. of oregano, 1 tsp. paprika, 1 tsp. chilli flakes, 2 tsp. basil; can be added in this process, or once you’ve mixed the sauce.
  3. Once your pasta is ready, add your beet and chick pea mixture into the pot; stir with your pasta and then serve.

*Pro tip: Want some additional flavour? 

Feel free to add some pesto to the mixture! Refer to my recipe here for more details. It adds a nice contrast to the pasta mixture 🙂
