Tom Yum Hot Pot Recipe

As a belated dinner for my sister, I wanted to try out recreating a Tom Yum Hot Pot recipe. I asked a coworker of mine to send me a recipe to try out, the link can be found here: Tom Yum Hot Pot. And I have to say, for my first time cooking up a Hot Pot recipe…it turned out pretty great 😉

Ingredients for the soup base (Obtained from the link shown above, all rights go to their respected owner)

  • 3 cans chicken broth, preferably unsalted (I ended up boiling soup bones for a base, but this recipe asks for chicken broth)
  • 24 dried kaffir lime leaves
  • 4 slices dried galangal
  • 4 slices fresh ginger
  • 4 tablespoons dried lemongrass
  • 1 tablespoon lemon or lime zest
  • 1/2 large onion, sliced
  • 2 medium tomatoes, cut into wedges
  • 2 teaspoons tom yum paste (add more to taste)
  • Fish sauce (give it a generous shake, then add more if you want more salt and umami)

Hot pot ingredients

Here are the ingredients I added. Take them as suggestions and add what you like:

  • Fish balls
  • Beef, sliced ultra thin
  • Firm tofu, drained, dried, and cubed
  • Shrimps, whole raw (Peeled)
  • Napa cabbage
  • Straw mushrooms
  • Normal mushrooms
  • Udon noodles

Other ingredients you might want to try out:

  • Asian Meatballs
  • Pork. sliced ultra thin
  • Corn on the cob (Sliced thick)
  • Morning Glory
  • Oyster mushrooms
  • Rice sticks or any other asian noodles you prefer
  • Dried tofu
  • Assorted vegetables
