I wanted something easy to make, and can be used in a variety of ways. This Pesto sauce can be used on top of pastas, breads, over some egg whites..the list goes on! I came up with my own version of the recipe, please note that you can add more or remove bits to your own liking 🙂
Easy Pesto Sauce
This recipe creates about a portion size of a cup.
- 4 Cups of Fresh Spinach
- 2 Cloves of Garlic
- 1 Cup of Parmesan
- A pinch of pepper to taste, salt can be added too however I’m not a fan of the addition of salt haha.
- 1/2 Cup of Cauliflower or Broccoli (Boiled)
- 1/3 Cup of Extra Virgin Olive oil
Combine all the ingredients in a food processor and voila! I’ve added the sauce on top of pasta, but as mentioned above there are other ways to enjoy it as well! I like the addition of the cauliflower because it adds another texture to the mix. Broccoli is definitely a good alternative as well if you wanted to add some to the mixture!
